Sweet potato cinnamon rolls πŸ‘©πŸ»‍🍳

True confession: I LOVE baking, but I’m a basic baker. These were a challenge for me, but well worth it πŸ‘©πŸ»‍🍳 I’ll narrate my experience in the recipe 

 

Vegan, GF, Oil Free

Beneficial for gut health

Only natural sugars

Really filling

Totally satisfies your cinnamon roll "needs" πŸ™ŒπŸΌ

 

Ingredients ~

Base:

1 large pre baked squishy sweet potato (I used a Japanese sweet potato)

1.5 cups flour (or more depending on sweet potato size … I used Bob’s All Purpose GF flour)

1 tsp baking powder

1/4 tsp baking soda

Salt to taste

1 tsp vanilla

 

Filling:

5+ pitted medjool dates (add more or less depending to adjust sweetness … I used 7)

1-2 tsp cinnamon

A few tbsp plain plant milk (2-3 ingredients max!)

 

Icing:

2 tbsp plain plant based yogurt

1 tsp maple syrup

1/2 tsp vanilla

 

Instructions ~

1. Peel & mash pre-baked sweet potato and add all other base ingredients. Mix until it all comes together. Roll it out into a large rectangle.

notes 🀍 I ate the peeling as I peeled it 😬 most of the amazing nutrients are in the sweet potato skins

🀍 My dough needed a lot extra kneading, water, and help … But I did prevail πŸ™ŒπŸΌ

🀍 Rolling it out into a large rectangle was also some serious effort 😳 I got it to a fairly good size oval-ish shape eventually

 

4. Soak medjool dates in boiling water for 5 mins to soften. Then add filling ingredients into a bowl and mix together.

notes 🀍 This was easy, and boosted my confidence haha

🀍 It did take a LOT of mashing of the soaked dates, however … so mash away.

 

4. Add the filling on top of rolled out dough, spread evenly and roll it up.

notes 🀍Adding the filling was also a confidence booster.

🀍 Rolling it up was a whole other feat πŸ˜‚ I prevailed yet again, albeit with cracks in the dough.

 

5. Place in an oven safe dish and bake at 355℉ / 180℃ for 20-25 mins. Mix together icing ingredients, let it cool for 5-10 minutes, and pour it over the top!

notes 🀍 The icing is SO TASTY! I’d like to drink it, but chose to use it properly.
