Healthy Blondies

👩🏻🍳 really light and fluffy … SO GOOD!
Vegan | Gluten Free | Oil Free | Only natural sugar
🤔 So they don’t taste exactly like blondies to me, and have that super subtle hint of banana, but it’s definitely not banana bread-y …

Ingredients:
~ 1 large ripe banana, mashed
~ 1 flax egg or 1 egg
~ 1/4 cup peanut butter, drippy (or any nut / seed butter with 1 ingredient … 2 max = nuts & salt)
~ 1/4 cup maple syrup
~ 1 cup oat flour, GF if necessary or any alternative flour (I ground up oats in a coffee grinder)
~ 1/2 tsp baking powder
~ 1/4 cup chocolate chips (optional) Hu brand are great!
Directions:
~ Preheat oven 180c / 355f
~ Mix together the wet ingredients (first 4 ingredients) and then the remaining ingredients. Mix well.
~ pour into a loaf pan
~ Bake for 20 minutes or until a toothpick comes out clean
~ Store in the refrigerator
