Corn Bread

vegan gluten free corn bread side dish

Ingredients

~ 1&1/4 cups spelt flour (you can use brown rice flour for gluten-free)ā£
~ 1 cup yellow cornmealā£
~ 2/3 cup coconut sugarā£
~ 1 tsp saltā£ ~ 1 tbsp baking powderā£
~ 1&1/4 cups unsweetened almond milkā£
~ 1/3 cup olive oil (or replace the oil with unsweetened apple sauce)ā£

Instructions

~ preheat oven to 400°Fā£
~ lightly spray an 8×8 pan or a 9 inch round pan with organic olive oil or coconut oil sprayā£
~ in a large bowl, combine the spelt flour (or brown rice flour), cornmeal, coconut sugar, salt, & baking powder…stirā£
~ now pour in the almond milk and olive oil (or apple sauce), stir until well combinedā£ ~ pour into prepared panā£
~ bake 20-25 min until a toothpick inserted comes out cleanā£
